The grapes are picked when fully ripe, gently crushed and allowed to begin fermentation with their skins. This process is what gives the wine its elegant pink colour. The pink skins are removed when the colour and aromas are judged by the winemaker to be just right. The wine then finishes the fermentation in large modern steel tanks at a cool temperature, which keeps the wine very fresh. More Le Ballerine
