Del Maguey (pronounced Ma-Gay) offers the only range of mezcal produced that is currently certified organic. Del Maguey is a collection of fine, rare, unblended mezcals made by individual family producers in small remote villages scattered throughout the state of Oaxaca (pronounced Wah-Ha-Kah) in Mexico. With one exception – the rare Tobala - they are produced from 100% espadin agave, and are all produced according to traditional processes over four hundred years old. Each Del Maguey mezcal bears the name of the village where it is produced, and is unique with flavours expressing the personalities, culture and the history of the village.

The hearts of maguey are roasted over hot stones in a pit in the ground for three to five days covered with earth. They are then ground to a mash using horse-powered stone mills, followed by a long period of natural fermentation in wooden vats and finally distilled twice, very slowly, in wood-fired clay or copper stills.

Del Maguey mezcals have been described as smokey, true, deep and warm. Production is only available in exclusive quantities, for each different village's mezcal, to preserve 16th century style and quality.

Each bottle of Del Maguey mezacal comes with its own unique handwoven palm fiber basket. The women of Oaxaca have been weaving palm fiber baskets for thousands of years. Each of their designs are of ancient Zapotec or Mixtec origin. The designs are abstractions of flowers, ceramics, landscapes or architectural elements.  It takes one woman one-half day to weave each cover for a bottle of Del Maguey Mezcal.
