The Grillo vineyards are based around the historical town of Trapani, known for its beautiful panoramic views and ancient monuments. The vineyards are around 100-200m above sea level. The grapes are hand picked into small baskets and then gently pressed and allowed to rest at 5℃ for 24 hours to revitalise the fresh citrus aroma. There is then a cold temperature controlled ferment and the wine is kept in tank for 6 months before bottling.
The Primitivo vineyard are located in the classic high quality area of Salento and benefits from very sunny warm conditions. The grapes are hand picked and fermented slowly to extract the full flavour, but at a cool temperature to keep the elegance.
