Chateau Haut Mayne sauternes is a sweet white wine, produced from grapes dried in the sun candied. Over-ripeness will be aimed at by picking botrytiçs cinerea and « noble rot » in order to obtain a must concentrated in taste and aromas.
Fermentation achieved in new casks for Château Caillou in stainless steel tanks for Château Haut Mayne. Ageing in oak casks is for 21 months.
The size of the vineyard is only 3ha and has a specific soil. The production is very low: 1 wine plant = 3 glasses of Sauternes.
The 2007 vintage: A very sunny late autumn enabled the installation of perfect maturity, triggering an exceptionally pure botrytis. A tasting expressed a vivid freshness underpinned by perfectly balanced acidity liquor: 13.5 alcohol, 5.6 of liquor. Delicious wine with notes of honey, apple and meringue with great finesse of a very delicate sweetness. This vintage was aged in new oak barrels for 21 months and was bottled September 3, 2009.
