Domaine du Haut Banchereau is a family business situated in the heart of the Muscadet since 1870, it is a beautiful 12 hectare estate in the prestigious Muscadet Sevre et Maine appellation on the east slopes of the Sevre Nantaise river.
Harvest is done mechanically to increase the speed of this process and improve the quality of the grapes when entering the cellar. The juice has a period of cold settling before fermentation in temperature controlled tanks to keep the fresh lemon fruit character.
After fermentation the wine is left on the fine dead yeast cells “lies” until the April after harvest. This adds a yogurt-y complexity to the wine and improves the mouth feel.
