Situated on the Morainic hills that pleasantly slope towards the south shore of Lake Garda, Castelnuovo is an ancient town, close to Verona, approximately 100 meters above sea level.
The “commune” of Castelnuovo del Garda, incorporating the southern districts of Cavalcaselle, Olio and Sandrà, is located in panoramic and beautiful country side, full of character, valuable architecture and historic reminders. The vineyards in this area have been cultivated for hundreds of years and fit into the traditional scene with ease.
The grapes are picked when fully ripe, gently crushed and allowed to begin fermentation with their skins. This process is what gives the wine its elegant pink colour. The think skins are removed when the colour and aromas are judged by the winemaker to be just right.
The wine then finishes the fermentation in large modern steel tanks at a cool temperature, which keeps the wine very fresh.
