The Moillard Family have owned many of their vineyards since before the French Revolution from 1789. In 1850, the first train line was completed from Paris to Lyon and with it Domaine Moillard became a well respected fine wine.
All of the major wine writers over the last 150 years have visited the domaine and know of the production. Moillard is seen as one of the best and consistent producers in the Côte de Nuits and features in many great wine books and reviews.
Moillard's vineyards are currently undergoing the process of becoming organic certified which should be completed over the next two years. The viticultural practice has always been very natural and non invasive, allowing the vines to grow deep roots and really show all that the terrior has to offer.
Each soil type and terroir change has been accounted for over the years. Different grape varieties have been planted on the best soils for a certain expression. Now even different clones and rootstock types have been taken into consideration so that they are matched with the best possible site.
In 2009 the Moillard cellars were modernised – new, and many more vats were installed allowing for single vineyard or even single plot vinification. A new soft press was installed and the unloading area was re-worked to allow for a better sorting area, where the grapes can be hand sorted and selected after being de-stemmed.
The barrel cellars were also revitalised with a better temperature and humidity control system put in place. All of the red wines and most of the whites are at least rested in old oak, while many are put to age in new French oak.
To ensure that the domaine's house style does not lose its traditional feel, in the sight of all this modernisation the winemaker has remained the overbearing constant. He has been the winemaker for 20 years at Moillard and will hopefully continue for another 20 years!
