Unaged
Unaged cachaça is clear and is generally fresher and more herbaceous than its aged counterparts. Although it is not mellowed by years in wood it is frequently allowed to ‘rest’ for a few months in stainless steel or other large vats. This softens the spirit and harmonises the flavours, making it smooth and clean in flavour.
