Champagne
Champagne is a French sparkling wine which can be white or rosé. The term Champagne has protected usage and it was the European Union which gave Champagne its P.D.O. status ( Protected Designation of Origin). It is exclusively produced in the Champagne region (half way between Paris and Alsace) and is made exclusively from Chardonnay, Pinot noir and Pinot Meunier grape varieties. The “Méthode Champenoise” is the official process employed, which briefly consists of fermenting the wine in specially corked bottles so that the gas is prevented from escaping, thus creating its bubbly characteristics.
