These very fine Champagnes are in general much older than non-vintage Champagnes, if only because their minimum legal maturation is 3 years instead of 18 months. Some quality oriented Champagne makers push the maturation of their vintage Champagne to 5 years. The blends must originate from a single harvest and be of sufficient quality for the Champagne maker decides to declare it a “Vintage” year.
