Wolfburn Aurora starts its life the same way as the Northland. The worts are fermented for roughly 75 hours then the spirit is double distilled, slowly, first through the wash still and then through the spirit still.
It is once the distillation is complete that the whisky begins to transform; matured in three different types of casks, 40% is matured in the same second-fill quarter casks as the Northland, 40% in first-fill ex-bourbon barrels and the final 20% in first-fill Oloroso sherry hogsheads. The casks are stored using traditional dunnage methods; on their side, bung up, on stows, never higher than three.
At the end of the maturation process, the casks are brought together to create an exceptionally smooth and perfectly balanced dram, bottled at 46% abv. Sherry maturation gives the whisky extra colour, a wonderful sweetness both on the nose and the palate, with a hint of spice in the background.
