Founded in 1928, Botter is recognised as one of the family-owned specialist producing Prosecco in Veneto. Located a few kilometres from Venice, in Fossalta di Piave, the family still operates where the original company was founded. The third generation took over their parents to continue the tradition while bringing new ideas on board as offering vegan and organic Proseccos.
Vineyards benefit from a temperate climate, influence by the sea and the Alps which protect them from the northern winds. Cold and wet winters, hot and humid summers are the perfect combination to grow healthy grapes.
After a gentle pressing, the must is transferred in steel tanks for a static cold decanting. The fermentation with selected yeasts, started at a controlled temperature and lasted between 8 to 10 days. Afterwards, the wine is filtered and the second fermentation called Charmat method happened at a controlled temperature. Once the wine has reached the required pressure levels, alcohol and sugar content, it is refrigerated, cold stabilized and filtered before bottling.
