In the 1980s four Catalan families decided to resurrect Can Llopart de les Alzines, a historical estate dating back to 1499. They joined their 4 estates to create one sharing the same philosophy: Vins el Cep. This is one of only 25 estates out of 290 which produces Cava exclusively from their own vineyards.
The vineyards have been selected for each variety. Macabeo from Can Simón estate, Xarel·lo from Can Prats in Sant Llorenç d’Hortons and Parellada from Can Castany in Gelida, in Costers de l'Anoia. From these 25 hectares, the best grapes with optimum ripeness and acidity are obtained. The vineyards are into an organic conversion process.
The hand-picked grapes arrive by gravity into the winery. A gentle low-pressure pressing takes place with just 50% extraction of the free-run juice. Temperature-controlled fermentation occurs followed by secondary fermentation and over 15 months ageing in bottle.
Tasting Note: Enticing aromas of honey, nuts, white flowers and a touch of nougat. Long dry finish with hints of orange rind and citrus and a vibrant, frothy mousse.
Food Match: Ideal as an aperitif, for Sunday brunch or with light salads and fish
