Domaine Courbet Savagnin is aged sous voile in barrel, in the local fashion by rising Jura star, Damien Courbet. This biodynamic wine is a poised, mineral white of great length.
Domaine Courbet was founded in 1896 and consists of just 7.5 hectares, half of which are in the prestigious Château Chalon appellation, source of the Jura's finest wines. Damien Courbet is surely a big star of the future – since taking over from his father Jean-Marie he has started working biodynamically, making small quantities of immaculate wines in a fine elegant style, very focused on terroir, with a technical yet light touch approach to his winemaking that brings out the maximum expression of the region and its varieties. The wines avoid rusticity while being true to their origins. From 2 parcels of biodynamically grown vines, largely grown on clay-limestone and grey marls. One quite high up, and one just under the cliff of Château Chalon itself. Tank fermented to preserve floral aromas, then aged in barrel for 2 years, the second of which is “sous-voile”. A nose of white flowers, hints of pear, complex marzipan notes; acid high but in balance - beautifully made with hints of orange rind on the finish. Concentrated and long
