Domaine de la Chenardière Côteaux du Layon
Domaine de la Chenardière is a large estate of 100 hectares located in the Layon valley. The vines perch on the steep slopes of the right bank of the Layon river.
The autumn humidity provides the perfect conditions for botrytis or noble rot, which concentrates the sugars in the grapes while the Chenin Blanc retains its natural acidity.
The botrytis grapes are harvested when they reach the optimum acidity level. Then, the grapes are gently pressed for 7 hours. A static settling occurred before the fermentation started and last for 2 months. The wine is aged in temperature controlled vats for a minimum of 6 months.
