Dr. Polidori Dry Tonic Water
Dr John William Polidori was a literary figure of the highest order. He was also the personal physician to fellow writer and poet George Gordon Byron, commonly known as Lord Byron who became a leading figure in the Romantic Movement. Polidori’s masterful writings and alchemic distillates laid the foundation for a modern interpretation in the form of two tonics that the enterprising Doctor would’ve been proud of.
Tasting Notes: Very complex first of all, with many different botanicals including earthy basil and thyme, spicy cubeb pepper and instantly recognisable juniper. Floral and citrus notes are combined with spring water, which together with reduced sugar content results in a wonderfully dry tonic.
