Ladoucette make wines across the Loire valley, but their home is in Pouilly Fumé, where they make this legendary wine for which only the best vintages and the best and oldest parcels of vines are used. In the winery just free run juice is captured, and post fermentation the wine is aged on lees in vat for around a year with occasional batonnage to add richness and texture.
