Sullivans Cove American Oak Single Malt Whisky
Sullivans Cove produce old-fashioned, single cask, single malt whisky, because that’s what they like to drink. The whiskies are made from 100% Tasmanian barley, fermented by local breweries, then double distilled in their unique Tasmanian-built-and-modified pot still (her name is Myrtle).
Allowed to mature over many years in the rare Tasmanian climate, the whiskies are rustic, complex and textural. With the oldest stocks of any Australian distillery, the current bottlings include whiskies up to 18 years of age. The whiskies themselves are not defined by age statement: casks are bottled when they are ready.
As a single cask distillery, just one cask is bottled at a time, allowing each barrel to express its unique character. Every time a bottle of Sullivans Cove is opened, a new page is added to their story.
Tasting Notes: Sullivans Cove American Oak Single Cask is their most awarded expression. Aged in 200l American oak ex-bourbon casks, this is the defining style of Sullivans Cove, with a strong malt backbone and flavours of vanilla, caramel, stone fruit, white flowers and soft oak. As a single cask bottling, each tiny batch is allowed to express its own unique characteristics.
