Archipelago honours the legacy of Peter Westfall, who, after fleeing the Russian Revolution, arrived in the Philippines and called the country home for the next twenty years. Their range of spirits now encompasses various premium gins and vodkas, designed to let the indigenous botanicals of the Philippines shine.
Navy strength gin – bottled at 57% alcohol by volume – packs far more of a punch than regular gins, which tend to be bottled around the 40% mark. As alcohol carries flavour, the botanical taste tends to be far bolder, making navy strength gin an excellent option for cocktails. The same is true for this example, which employs local Filipino botanicals, including dalandan, calamansi and pomelo, to complement the earthy, pine-forward flavours of juniper berries. Mix with dry vermouth for a classic martini, or Campari and red vermouth for a tropical negroni.
