This is a very fine strawberry liqueur from Briottet, a French producer of fruit liqueurs with a history dating back to the mid-nineteenth century. Several types of wild strawberries are macerated in alcohol before the addition of sugar, leading to a wonderfully defined strawberry taste. Mix with gin, crème de cacao and dairy cream for a strawberries and cream cocktail.

Originally a wine bottler, Briottet, upon noticing the nineteenth-century fashion for drinks made with fruit liqueurs, started making crème de cassis. Quickly realising the potential of these kinds of drinks, Briottet rapidly expanded its liqueur range, and its reputation for quality has only increased.
The production of this liqueur starts with the selection of several different varieties of wild strawberry. These fruits are macerated in alcohol, which is then sweetened by the addition of pure sugar. The liqueur is subsequently bottled. This production process results in an incredibly pure, defined strawberry liqueur, with very little of the artificial taste that afflicts lower-quality examples. While delicious on its own, this shines in cocktails. Replace the crème de cassis in a Kir Royale for a red-fruit twist, or mix with gin, Cartron crème de cacao and dairy cream for an alcoholic twist on the classic strawberries and cream dessert.
