The distillery is housed in a repurposed aircraft hangar on the edge of a former naval air station, now transformed into a bird sanctuary with sweeping views over the Bay Bridge and San Francisco skyline. Inspired by the local terroir and driven by a distinctly Californian approach to innovation, Hangar One produces its vodka using traditional Holstein pot stills, in stark contrast to the industrial column stills common in large-scale production.
The Kaffir Lime Vodka is built around the unusual and highly aromatic Indonesian lime, known for its bumpy, irregular skin and intensely fragrant leaves. Widely used in Thai cuisine, both the fruit and leaves are prized for their concentrated essential oils. Rather than relying on artificial flavours or extracts, Hangar One uses a meticulous infusion and maceration process, incorporating both the lime and leaves to preserve the purity and complexity of this rare citrus.
The result is a vodka that captures the vivid, almost electric character of kaffir lime in full. On the nose, it delivers an immediate burst of citrus oils that perfectly mirror the fresh fruit. The palate reveals more unexpected complexity, with rich notes of wood, white pepper, and a subtle freshness of cucumber. The texture is smooth and rounded, with a slight warming on the finish that gives way to a lingering, quinine-like bitterness from the lime oils evaporating mid-palate.
