Domaine Joseph Pascal, formerly known as Domaine Jean Pascal, is a family-run estate situated in Puligny-Montrachet. The estate spans 15 hectares across Burgundy's Côte de Beaune, encompassing vineyards in Puligny-Montrachet, Meursault, Auxey-Duresses, and Volnay. The estate practices sustainable viticulture with minimal intervention, allowing the terroir to speak through the wine. Fermentation occurs in oak barrels, with ageing on fine lees for approximately 12 months. The use of 20% new oak enhances complexity without overpowering the wine's natural character.
This Puligny-Montrachet Rouge offers a medium-bodied profile, featuring vibrant aromas of red cherry and raspberry, complemented by subtle notes of clove and mint. The palate is soft and lingering, with flavours of forest floor, baking spice, wet stones, and a hint of vanilla. The wine's balanced acidity and fine tannins contribute to its structure and ageing potential.
This wine pairs beautifully with a variety of dishes. Its vibrant acidity and red fruit profile complement roasted poultry, such as duck or chicken, as well as dishes featuring earthy mushrooms. It also pairs well with charcuterie and soft cheeses, such as Brie or Camembert.
