Highland Park Distillery, located in Kirkwall on the Orkney Islands, Scotland, has a rich heritage dating back to 1798. Founded by Magnus Eunson, a butcher and church officer who secretly distilled whisky, the distillery is one of the oldest legal distilleries in Scotland. Its name derives from "High Park," the site where the distillery was established, not from the Scottish Highlands. Unique to Highland Park is its location on the Orkney Islands, where the local peat used in production contains mainly heather, fern, and bracken rather than tree roots. This results in a distinctive floral and fragrant smoke character unlike other Islay or mainland peated whiskies.
The distillery utilises hard, local spring water and continues the tradition of floor malting barley on-site, with approximately 25% of the malted barley produced in this manner, thereby maintaining traditional craftsmanship. Highland Park is renowned for its balance of smoky peat and sweet sherry cask flavours, matured primarily in Oloroso sherry casks from Spain, which are made from American or European oak.
The LIMITED Highland Park 1989 33yr. It is a rare single cask bottling, distilled in 1989 and matured in a bourbon hogshead cask (#3004) for 33 years before bottling at a robust 49.1% ABV in 2023. This expression showcases hallmark characteristics of Highland Park: a deep copper colour with aromas of brown sugar, toffee, salted pretzels, and vanilla pods. The palate opens with peppery spice followed by tropical fruits, heather honey, and a light peat smoke, supported by an oily mouthfeel. The finish is medium-long with warming notes of cinnamon, nutmeg, and lingering citrus.
