Pasaeli is a pioneering winery proudly representing Turkish winemaking on the international stage. Turkey is blessed with a wealth of unique indigenous grape varieties (some estimate over 1,000, compared to Italy’s 600), a Mediterranean climate, and centuries of winemaking tradition, and is, in fact, the world’s sixth-largest grape grower. The wine production scene, however, is limited to smaller, boutique producers who are mostly export-focused – among them, Pasaeli. Founded initially as a fine wine importer in 1993, the company shifted to growing and vinifying its wines around the turn of the millennium, and bottled its first wine in 2010.
Their grapes are all sourced from single vineyards around Turkey’s Mediterranean coast, near Izmir, Tekirdag and Canakkale (close to the ancient city of Troy). All of the grapes are hand-harvested, and exclusively natural yeasts are employed during the vinification process, resulting in wines that are authentic expressions of their unique terroirs. The ancient Sidalan variety originates near Troy, which is where Pasaeli’s example is still grown. The juice’s fermentation was carried out in large stainless steel tanks, and, to give a characteristic sparkle, the wine was bottled before fermentation was complete – the ‘methode ancestrale’, resulting in a ‘petillant naturel’. Before disgorgement, the wine underwent six months of additional lees ageing, resulting in added complexity.
This is a whistle-clean, vibrant pet-nat with fresh fruit flavours, sure to delight both pet-nat aficionados and those perhaps more accustomed to Champagne or Prosecco. Pasaeli proudly offer this wine without fining or filtration to capture the natural character of the grapes as much as possible. An excellent aperitif, this pet-nat is also a versatile pairing partner for a wide variety of mezze – try it with traditional Turkish stuffed vine leaves.
