The Tannat grape, originally from Madiran in southwest France, has found its true home in Uruguay, where it has become the country’s flagship variety. Pizzorno Family Estates, founded in 1910 by Don Próspero José Pizzorno, has been at the forefront of this transformation for more than a century. Today, the estate is led by fourth-generation winemaker Carlos Pizzorno, who continues the family’s tradition while incorporating modern viticultural and winemaking techniques.
The Profecía Tannat is sourced from the San Francisco vineyards in Canelón Chico, located just north of Montevideo. The region enjoys a temperate climate with strong Atlantic influence, marked by warm days, cool nights, and an average annual temperature of 17°C. These conditions, combined with fertile clay-loam soils, allow Tannat vines—now 20 to 25 years old—to achieve full phenolic ripeness while retaining natural acidity. The vines are trained using an espaldera-lyra system, which improves sun exposure and air circulation, helping to produce healthy, evenly ripened fruit.
Grapes are hand-harvested and undergo a brief cold maceration to enhance aromatics before traditional fermentation in concrete tanks. Fermentation lasts around 8 days, with strict temperature control (25–28°C) to preserve freshness and fruit purity. Regular pump-overs and délestage optimize skin contact, ensuring a balanced extraction of tannins, colour, and flavour. Unlike many reserve-level wines, Profecía Tannat is unoaked, allowing the varietal character to shine in its purest form.
Aromas are vivid and fruit-driven, with raspberry, cassis, pomegranate, and plum at the forefront. On the palate, it is medium-bodied with lively acidity, fine-grained tannins, and a subtle note of blood orange and black pepper that adds complexity. The finish is smooth, balanced, and persistent, making it both expressive and highly approachable.
Food pairing is an important part of Tannat’s identity, and Profecía Tannat is an excellent match for roasted meats, particularly pork or beef, as well as creamy sauces that complement its structure and acidity. Profecía Tannat stands out as an accessible yet authentic expression of Uruguay’s signature grape, showcasing both the unique terroir of Canelón Chico and the Pizzorno family’s dedication to quality and tradition.
