Vincent Dauvissat is one of Chablis' most respected and sought-after names, crafting wines that rank among the world's greatest expressions of Chardonnay. Farming his vineyards with biodynamic principles (though not certified), Dauvissat is revered for his ability to translate the unique terroir of each site with clarity and restraint. There's no flash, no overt winemaking, just purity of site, guided by meticulous viticulture and traditional methods.
La Forest is the most substantial of Dauvissat's Premier Crus, characterised by deeper clay-limestone soils and a south-facing exposure that lends the wine more weight and depth than his other crus. In 2020, a warm, dry, and sun-filled vintage, Dauvissat crafted a wine that manages to capture both ripeness and energy. Fermentation took place with native yeasts in stainless steel, followed by maturation in well-used oak foudres that lend texture without overt oak influence.
The 2020 La Forest is powerful yet poised, opening with aromas of lemon pith, crushed oyster shell, flint, and fresh white peach. The palate is structured and driven, with intense saline minerality, a finely etched citrus core, and a lingering, stony finish. There's generosity from the vintage, but it's tempered by bracing acidity and the site's deep mineral character. This is a wine of precision, not immediacy, and it will reward cellaring beautifully over 10–15 years.
Serve with simply grilled langoustines, Dover sole meunière, or fresh goat's cheese with olive oil and herbs. It also works exceptionally well with poultry in a white wine and tarragon sauce or risotto with spring vegetables, dishes that echo its clarity and tension.
