The collaboration between four families with deep roots in winemaking in the region, wine has been produced on the estates since at least 1488. The location of the winery in Can Llopart de les Alzines on the hills of Espielles in El Pendes has been there since 1499, with the estate today carrying five generations of tradition, culture and expertise. It was not until 1980 that the project of Vins El Cep was conceived when the Carreras, Esteve, Masana and Parera families, all of whom had generations of agricultural experience in the region, decided to take the step to go beyond just friends and neighbours to embark on a journey to create Cavas that display the exceptional terroir of the land.
At the centre of their project was a deep respect for the local environment and the traditions of the region, with the winery attaining organic certification in 2001. In 2003, they began conversion to biodynamic practices and released their first wines under these principles in 2006. The fruit for this Cava comes from old vines from three properties of Can Miquel de les Planes, Can Prats and Sant Llorenç d’Hortons, planted between 1958 and 1990. The vines are head and wire trained and planted at a medium density of 3,600 vines per hectare, striking the perfect balance between yield and grape quality. The terroir of the estates is characterised by moderately deep soils with porous flint and limestone subsoils providing the wine with its distinctive mineral character.
Made from 50% Xarel-lo, 25% Macabeo, 25% Parellada, with the grapes being manually harvested, this premium Cava is produced with low-pressure pressing utilising 50% extraction of the free run juice. The must is then fermented in stainless steel tanks at controlled temperature before undergoing a minimum of 24 months ageing on the lees prior to bottling. With only 0.5g/l residual sugar, this Brut Nature Cava epitomises the purist Cava philosophy.
A clean and fresh brut nature Cava, this sparkling wine expresses its youth with a well-defined mouthfeel and enticing notes of green apple with soft mineral nuances. The wine is all brought together with a pleasant acidity, making this Cava easy drinking and refreshing. Ideal as an aperitif or paired with seafood, oysters, and raw fish. Its mineral structure complements dishes like sushi, ceviche, or grilled octopus beautifully. Also, an excellent choice with goat cheese and Mediterranean appetisers.
