MEET THE TEAM

ADRIAN COPPLESTONE - STORE MANAGER

Upon leaving school, I embarked on a culinary career with an enrolment at Highbury College, Portsmouth. My first job in between studies was working on the historic ships in Portsmouth Harbour as my ancestors had done so in the age of sail and steam.  My passion for wine emerged that year when I was 17 before I could legally drink as I was given the opportunity to gain a WSET level 2 qualification in wine. However, being underage meant that I was not yet able to partake which wasn’t ideal! I went on to complete the WSET level 3 with distinction while specialising in restaurant management.

After college, I experienced most forms of hospitality from street food to catering for the corporate world. I spent several years alternating between chef and manager, however, I continued to improve my knowledge of wine informally in my own time. Over the last decade, I realised my dream of working more with wine as I took the opportunity to manage a popular wine bar/shop in London and was given the freedom to design the wine lists. Concentrating on Spanish Wine, one of my proudest moments was winning “Best Spain Specialist” in the Decanter Retailer Awards in 2021 (and runner-up in 2020). Sourcing wines and meeting with producers were some of the highlights, as well as educating and guiding customers in wine selection.

My taste is often influenced by the history and stories behind the wine as often, I find the families and winemakers as interesting as the contents of the bottle. I am drawn to the old and fabled as well as the young, rebellious and groundbreaking.  That being said, I do have a bias towards Italian wine as, having family based in Italy, I have been a regular visitor there for the last 20 years.  I use my forever-growing education in wine as an excuse to take detours to regions and wineries wherever I go.

Although wine will always be my first love, over recent years I have started to appreciate Whisky and Cognac. I greatly respect those who achieve wonderfully varied results from the same but simple ingredients with the good grace of nature thrown in.
