Description

From the first vines planted in 1849, Yalumba has been at the forefront of every turning point in Australian wine history, helping to forge Australia’s enviable wine culture from table wines to those that sit proudly amongst the finest wines of the world. With ancient vines sustained by the world’s oldest soils and enriched by the craftsmanship of generations, Yalumba is writing the next chapter in Australia’s fine wine story — a future for the wine world that thrives with authenticity, diversity, and distinction.

About the Producer

The Cabernet Sauvignon is sourced from three vineyards in the Barossa Valley, with vineyard diversity providing the rich, lifted aromatics and palate structure for which The Signature is known. The Shiraz comes from vineyards of varying ages, including the oldest, planted in 1925. These blocks feature sandy loam with yellow sand and ochre clay over red clay, producing a Shiraz with sweetness, fullness, depth, and complexity.

Matured for 19 months in 23% new Hungarian hogsheads, French barriques and hogsheads, with the balance in older French and Hungarian barriques and hogsheads.

Tasting Notes

A beautiful, deep red in colour. Perfumed and seductive with alluring floral notes, red licorice, blackcurrant and dark cherry aromas. The palate is delightfully refined and balanced with generous, dark red cherry fruit merging into ironstone tannins. This is a full-bodied wine of great balance, style and defined fruit characteristics with a long, lingering tannin profile. A very elegant Signature. Pair with char-grilled flank steak with salsa verde, fennel and currant salad; or black bean Jambalaya, a flavourfull one-pot rice dish.
