Besserat de Bellefon has been in operation since 1930, and they have a specific method for crafting their Champagne. They add less “liqueur de tirage” (a mix of sugar, yeast, and must), which creates a lighter, finer bubble with a mousse that is smooth, creamy, and persistent. Bleu Brut does not undergo malolactic fermentation - malo serves to soften the wine, typically creating a rounder, fuller mouthfeel. Instead, the wine is mineralic, energetic, fruity, and has real zip.
