Description

Emeline de Sloovere is a young, dynamic winemaker from a five-generation Grower Champagne family based in the Coteaux Sud d’Épernay. Since taking over her 8 ha estate in 2016, she has championed environmentally friendly viticulture, eliminating pesticides and herbicides, planting cover crops, and creating a biodiverse environment with trees, flowers, and birdhouses. Her estate also hosts an organic vegetable garden that provides ingredients for a farm-to-table concept. Emeline is a renouned trailblazer in sustainable Champagne production: she was among the first in Champagne to eliminate the metal neck foil, a historic and controversial element in the region, making a small but symbolic mark in Champagne history. Her experience includes training in the United States, and she combines traditional methods inherited from her grandfather with innovative, non-conformist approaches, positioning her as one of the most talented and forward-thinking young producers in the region. Champagne Emeline de Sloovere PATIENCE Extra Brut NV is a blend of 75% Chardonnay and 25% Meunier from old vines. Emeline employs a combination of parcel fermentation in small wooden barrels, concrete tanks, and stainless steel, relying exclusively on indigenous yeasts, and avoiding cold stabilization and filtration to preserve the wine’s natural expression. Extended lees aging and the use of perpetual reserve/solera inherited from her grandfather give complexity and depth.

Tasting Notes

On the nose, the wine displays delicate floral fragrances layered with a subtle smokiness, hinting at the complexity and texture from the extended lees contact. The palate is full-bodied, creamy, and elegant, with fine bubbles that highlight the freshness of the fruit. The wine’s crisp acidity balances the richness, while the persistent, mineral finish reflects both the terroir of Coteaux Sud d’Épernay and Emeline’s meticulous, sustainable approach to winemaking.

How To Enjoy

Perfect with fresh seafood, lightly smoked fish, poultry with creamy sauces, or soft cheeses. Its elegance and structure also make it an ideal wine for celebratory occasions or as a refined aperitif.

Delivery

Challenge 21 - You must be 18 or over to buy alcohol. You must not buy alcohol on behalf of those under 18. We apply the "Challenge 21" policy to all delivery and collection orders. We will not supply if the person receiving or collecting orders appears under the age of 21.

We charge a flat fee of £5.95 for delivery if your order is under 20kg, and £10 inc VAT if it is over 20kg. Free delivery is available for orders above £125 (inc VAT).

For Standard Delivery, we will ship items within 2 working days, provided the order is placed before midday.

For Express Delivery, we will ship items the same day, provided the order is placed before midday.

Once your order has been dispatched, you will receive a shipment confirmation email, and the following day, you will receive a text from our courier with a delivery window. If your order has not yet arrived, please email [email protected] and quote your order number.

You have the right to cancel your order at any time without being charged for the goods ordered within 14 days of purchase.

If you call us after your item has shipped, we will be unable to cancel it and you will need to return to us.
