Description

Champagne Denis Salomon is a fifth-generation grower Champagne, now run by Nicolas Salomon, who works just under 5 hectares across 22 small plots in six villages, in the Marne Valley. The vineyards are all farmed sustainably under HVE certification. The clay soils of the region add richness to the wines yet the lack of malolactic and use of stainless-steel fermentation, contribute precision and freshness to the wines. Bauchet Thomas 2019 Brut Nature is made from a plot planted in 1974 by Nicolas’s father. 100% Pinot Meunier, fermented in large oak, no malolactic fermentation and zero dosage. Oak fermentation, 60 months on lees and zero dosage result in a wine of great structure with red fruit, spices, hazelnuts, minerality and precision. A great gastronomic Champagne.
