Following traditional copper pot distillation, the spirit matured in French oak casks for approximately 20 years before being bottled on 24 November 2011 at 45% ABV. The extended ageing has created a spirit of exceptional depth, elegance and balance.
The nose is intensely aromatic, revealing dried apricot, candied orange peel, toasted hazelnuts, vanilla, cocoa and sweet baking spices. The palate is rich, silky and beautifully integrated, with layers of raisins, caramel, roasted coffee, dark chocolate and candied citrus, supported by subtle earthy complexity and refined oak. The finish is remarkably long, warming and elegant.
Bottled in minute quantities and rarely seen outside private collections, the 1991 Marc de Bourgogne is an extraordinary collector's item and a superb digestif, best enjoyed neat in a tulip-shaped glass.
