At a Glance

The grapes were grown on a 0.91-hectare parcel of 9-year-old vines. Fermentation occurs with indigenous yeasts in stainless steel vats, preserving the wine's freshness and terroir expression. Post-fermentation, the wine is aged in traditional 132-litre Chablis barrels (feuillettes) averaging seven to eight years old, ensuring subtle oak influence. After 12–15 months in barrel, the wine rests in stainless steel tanks for an additional 3–6 months before bottling, followed by a further 6 months of bottle ageing prior to release.

Presents a luminous pale gold hue. On the nose, it offers aromas of ripe apple, citrus zest, and chalky minerality. The palate is medium to full-bodied, displaying crisp acidity and flavours of lemon, green apple, and a hint of tropical fruit as it matures. A pronounced saline finish underscores its Chablis character, with the potential to evolve gracefully over the next 10–15 years.

Ideal with seafood dishes such as oysters, grilled fish, or scallops, as well as poultry and creamy cheeses.
