Award-winning whisky distillers Sullivan’s Cove initially set out to make an easy, simple gin, but soon realised their spirit expertise was driving them to something more complex and rewarding. Four botanicals from their native Tasmania – lemon myrtle, anise myrtle, wattleseed and pepperberry – come to the fore to give flavours of ripe citrus, vanilla and tingling pepper-spice. The base spirit (using the same malted barley as their whiskies) lends a rich, almost creamy texture and subtle flavours of vanilla and malt. The result is a serious gin, perfect for a strong gin and tonic or a vermouth-light martini.
