The Isle of Raasay Amathus Single Cask 21/744 is a limited release drawn from a single ex-Oloroso sherry barrique, selected exclusively for Amathus. Distilled in 2018 and bottled at cask strength without chill filtration, it showcases the influence of rich sherry wood on the distillery’s lightly peated spirit. The nose opens with dried fruits, roasted nuts, and smoke. On the palate, layers of dark chocolate, figs and clove are balanced by a gentle coastal salinity and a thread of peat. The finish is long and warming, with lingering spice and fruit. This single cask offers a concentrated snapshot of Raasay’s evolving house style, with depth and individuality.
