Mar de Envero was founded in 2007 by vigneron Manyo Moreira, who had worked on various projects in different Spanish appellations but returned home to the cool Atlantic coastal climes of Galicia, in the Rosal subregion. Once the winery was established in Rías Baixas, he took the leap and started a new project in another Galician Appellation, the Ribeira Sacra, of inland Galicia.
The Volandia is a single varietal Mencía made with grapes from old vines from the Ribeira Sacra Appellation. Limited and numbered production of 2.950 bottles. Ribeira Sacra is known for its unique style of viticulture called "heroic viticulture," due to the challenging terrain where vineyards are planted on extremely steep slopes and terraces. This demanding environment restricts mechanisation and requires intensive manual labour, making it a challenging yet rewarding area for wine production.
Soils are characterised by their diverse and challenging nature, formed from granite, slate, and schist bedrock. These soils are typically loose, with low structure and high permeability, requiring careful management to prevent drought. The steep slopes are terraced with stone walls, which act as heat accumulators and improve drainage. The plot is located in the Amandi subzone, which is ground zero of the Appellation
The harvest is carried out by hand in 20 kg crates to avoid possible breaks in the berries. A pre-fermentation cold maceration is carried out for several days to followed by alcoholic fermentation at a controlled temperature. Ageing takes place in second-filled French oak barrels of 400 litres for 12 months. The wine is then left to rest in stainless steel tanks, followed by a minimum maturation in bottle for 6 months.
Cherry red colour. An aroma of cherries, blackberries, blueberries, earthy mushrooms, violets and jasmine. Spicy notes such as thyme and black pepper. Expands in the glass to give balsamic notes accompanied by black liquorice. Refreshing structure; medium bodied, round and silky with fine, elegant tannins.
