The Maizière Family has a long history in the region, being present in Burgundy since at least the 12th century when the Cistercian Abbey of Maizière was constructed in the town of Beaune. While it is unlikely that the family's ancestors were, in fact, monks themselves, they were definitely working for the monks on their vineyards during this time. It was not until Pierre Maizière moved from his native Meursault to Beaune in 1969 that the family's 10 centuries of history-making wine in the region was realised.
Pierre established a strong reputation for producing high-quality wines that reflected both the terroir and the region's winemaking tradition. Now 87, Pierre has handed the reigns to his two children, Anne and Pascal, although he still carefully watches over the destiny of the reputation that he built over the years. Pascal, a qualified oenologist, and Anne, a wine marketing and sales veteran with over 25 years of experience, have breathed new life into the business founded by their father.
Grown in the rich limestone soils for which the region is famed, the grapes are de-stemmed before undergoing pre-fermentation cold maceration to extract the colours and aromas from the skins. The alcoholic fermentation lasts anywhere between 10 and 18 days in open-top tanks, with the must undergoing daily pigeage (punching down) to further extract colour, flavour, and tannins from the grapes. The skins are then gently pressed using a pneumatic membrane press before undertaking malolactic fermentation and ageing in French oak barrels.
To best appreciate, it is recommended to serve at a temperature of 16 to 18°C. Decanting for 30 minutes will open the wine up and allow the aromas to fully reveal themselves. Medium-bodied with silky tannins, exuding aromas of bright and floral red berries with a long, earthy finish. Consider pairing "Cuvee La Croix Saint Balthazar" with roast duck with red fruits, braised beef or regional dishes such as Coq Au Vin, where its earthy notes combine harmoniously with its aromatic profile.
