Harvested by hand in early October, the grapes undergo gentle destemming and are pressed under oxygen-free conditions. Fermentation occurs at controlled low temperatures, followed by four months of ageing on fine lees in stainless steel tanks, adding texture and depth.
Straw yellow in colour, the wine reveals bright citrus, anise, and iodine on the nose, with notes of peach, passion fruit, and a subtle sulphurous finish. On the palate, it is fresh, savoury, and mineral-driven, with excellent persistence and ageing potential through 2029.
91 Points on Decanter – In May 2023, James Burton says - "This all-steel 100% Carricante from the Martinella Contrada in Linguaglossa spends four months on the lees before bottling. Intense, pithy and mineral, it features white peach and grapefruit aromas, round, floral, peachy flavours, and apricot skin and mineral depth. Drink by 2038."
