Champagne Denis Salomon is a fifth-generation grower Champagne, now run by Nicolas Salomon, who works just under 5 hectares across 22 small plots in six villages, in the Marne Valley. The vineyards are all farmed sustainably under HVE certification. The clay soils of the region add richness to the wines yet the lack of malolactic and use of stainless-steel fermentation, contribute precision and freshness to the wines. The Histoire de Famille is the signature champagne of Denis Salomon and it is the first vintage that Nicolas’s parents made in 1974. It uses 25% reserve wines from a solera established in 2005, stainless steel fermentation, no malolactic and 5 g/l dosage, Extra Brut level. Expressive, fresh orchard fruits, red berry hints, sweet spices, and toasted brioche. Crisp and vibrant, balanced by a creamy, textured, and broad mid-palate of crunchy fruit.
