Desdeya Blanco Tequila
Desdaya is a highland tequila from Jesús María, Jalisco, distilled from fully mature Blue Weber agave grown at an elevation of 6,500 feet. The agave is slow-roasted in masonry ovens for up to 54 hours, crushed using a roller mill, and fermented with ambient yeasts, before being double-distilled in copper pot stills at the Destilería El Pandillo. Produced without additives and fermented using a red wine yeast strain from Burgundy, this innovative approach offers the tequila vibrant notes of mandarin, cashew, and cocoa butter.

Felipe Camarena produces Desdaya at Destilería El Pandillo in Jesús María, one of the highest points in Jalisco’s highlands. Camarena, a fourth-generation distiller and mechanical engineer, is widely regarded as one of the most innovative minds in the tequila industry. El Pandillo is a distillery built from the ground up to be energy-efficient and precision-focused, incorporating custom-made equipment, such as a mechanical tahona called “Felipestein” and a proprietary rainwater capture system.
The name Desdaya, a fusion of the Spanish words “desde” and “ya,” meaning “from now,” captures the brand’s intention to celebrate spontaneity and the joy of the present moment. That spirit carries through both the design and the liquid, resulting in a tequila that feels fresh, vibrant, and unmistakably of its place.
Crafted from 100% mature Blue Weber agave grown at high altitude, the agave is slow-roasted in brick ovens to concentrate its natural sweetness and complexity. Fermentation takes place over 72 hours using an unusual strain of red wine yeast from Burgundy, chosen for its distinctive character that it imparts to the end product. The tequila is then double-distilled and bottled unfiltered at 42% ABV, a deliberate choice that lends Desdaya a richer mouthfeel and a more pronounced flavour profile.
On the nose, Desdaya opens with bright aromas of honeyed agave, citrus zest and a subtle earthiness. The palate is smooth and layered, with notes of mandarin, roasted cashew, cocoa butter and white pepper, leading into a long, clean finish with just the right amount of heat. The higher alcohol gives the tequila structure and lift, without overpowering its elegance.
