Crafted from a single, meticulously selected vineyard in West Sussex, Nyetimber’s Tillington Single Vineyard 2016 is a sparkling wine of rare distinction and unmistakable character. Made from 78% Pinot Noir and 22% Chardonnay—all estate-grown—this cuvée is produced only in exceptional vintages, offering a genuine reflection of place and precision winemaking.
Its pale gold hue, laced with hints of silver, is animated by a delicate stream of fine bubbles. The nose opens with vivid notes of raspberry, red apple skin, and rose petals, evolving into subtler hints of crème brûlée, meringue, and cherry. On the palate, a vibrant freshness is beautifully balanced by richness and texture. Layers of orange zest, apricot, and creamy stone fruits unfold gracefully, underpinned by a marzipan sweetness and complex biscuity undertones that linger into a long, mouthwatering finish.
Vinified using the Traditional Method, the wine undergoes secondary fermentation in the bottle and is aged for several years on its lees. This extended ageing imparts depth, creamy complexity, and a refined mousse that elevates the wine’s elegant profile.
