Vincent Dauvissat is one of the undisputed masters of Chablis — a benchmark producer whose wines are sought after not for flamboyance but for their crystalline precision and unwavering fidelity to site. Farming just over 11 hectares biodynamically (without certification), Dauvissat's approach is rooted in minimalism and trust in terroir. The wines ferment with indigenous yeasts and are aged in old oak foudres, allowing the nuance of each vineyard to emerge without artifice.
La Forest (sometimes written "La Forêt") is arguably the crown jewel among his Premier Crus, a south-facing site just below the Montmains sector on deep Kimmeridgian clay-limestone soils. In 2022, a warm yet balanced growing season yielded wines of ripeness and intensity without excessive weight. The result is a wine that captures the full texture of the vintage, grounded by the cool nerve of the site.
The 2022 La Forest opens with a strikingly pure nose: crushed oyster shell, lemon zest, white flowers and a faint note of flint. The palate is linear yet fleshy, with citrus oil, saline drive and tightly coiled energy — the kind of Chablis that hums with tension rather than shouts. Its finish is long and stony, with a touch of almond skin and sea spray.
This is a wine for fine seafood: try it with turbot in beurre blanc, scallop carpaccio, or langoustines paired with fennel and citrus. It also pairs beautifully with more savoury dishes, such as roast chicken with tarragon or aged Comté. While compelling now, cellaring for 5–15 years will reveal La Forest's full complexity.
