As a single cask bottling, every tiny batch of Sullivans Cove American Oak Single Cask is different, expressing the unique characteristics of each barrel. Strong malt backbone and flavours of vanilla, caramel, stone fruit, white flowers and powerful oak.
Cask number TD0351 was distilled in December 2008 and decanted in September of this year for a maturation of a little over 12 years in a single, 200-litre, first-fill American oak ex-bourbon cask. Bottled at 46.5% abv.
Nose: Dried mango and a fresh bag of banana chips. Green walnuts. Strawberries and cream, and delightfully dusty timbers- fresh, and a bit aromatic… Sandalwood and incense. Toasting coconut, poached apricots, and an aromatic rummy note. Developing in the glass is jasmine, and the myriad of blackberry crosses, revolving around boysenberry. And wait for it... UNLIT CUBAN CIGAR (swoons).
Palate: Rolling texture, always a quietly confident way to enter the room. Toasted coconut, rye sourdough, a touch of star anise and fresh sappy figs. Dragon fruit and ripe cantaloupe deepens into maple syrup, condensed milk, butterscotch, marzipan and nougat, with a cleansing line of spearmint.
Finish: A ripper of a fruit bomb to start: cantaloupe, a lot of sweet orange juice, canned peaches with a touch of earthy brightness. Coconut, kaffir lime leaf and the perfumed nuances of a fine green tea. Swelling into a deep, sweet, fruity, malty world of joy.
