Château Fleur Cardinale is a Grand Cru Classé estate situated on one of the highest elevations in Saint-Émilion, offering a sweeping view over a complex mosaic of clay-limestone soils. Since they purchased the estate in 2001, Florence and Dominique Decoster have been at the forefront of transforming the château into one of the appellation’s rising stars. With significant investment in both vineyard and winery, the couple were instrumental in the property’s elevation to Grand Cru Classé status in 2006, a ranking reaffirmed in 2012.
After thirty years spent in the porcelain industry in Limoges, owners Dominque and Florence Decoster acquired the château in 2001 and have invested heavily in it and fully immersed themselves in the life of the estate. Their hands-on approach and close work with the team have been key to the château’s continued development. With a focus on precision and respect for the land, Château Fleur Cardinale began its conversion to organic farming in 2021, a natural progression in its commitment to sustainable viticulture.
The estate encompasses 22 hectares of vineyards sitting at 75 meters above sea level on the northern rim of the clay-limestone plateau that characterises the terroir of Saint-Émilion. The variation in soil composition, combined with the château’s elevated position, allows for excellent drainage and optimal ripening conditions that contribute to the balance, depth and elegance of the final wine. The fruit comes from vines with an average age of 30 years, with the final blend composed of 74% Merlot, 18% Cabernet Franc & 8% Cabernet Sauvignon.
In the winery, vinification takes place in a combination of temperature-controlled cement and stainless-steel tanks. Each plot is vinified separately to preserve its unique identity. The wines are then matured in French oak barrels for approximately 15 months, with a carefully managed proportion of new oak to enhance structure and aromatic complexity without overshadowing the fruit.
On the nose, Château Fleur Cardinale reveals layers of ripe dark fruit, vanilla, cedar and subtle spices. The palate is dense and juicy, offering flavours of blackcurrant, cassis and plum, supported by velvety tannins and notes of chocolate, nuts and toasted oak. The structure is full yet balanced, with a long and harmonious finish. For a delicious food pairing, enjoy venison with blackberry sauce or pork loin with fig and balsamic reduction, both of which highlight the wine’s ripe fruit and polished tannins.
The exceptional quality of Château Fleur Cardinale has gained wide acclaim from critics, being awarded a 95-point score by Decanter and 96 points from James Suckling. A great addition to any collection and one of the best expressions of the Saint-Émilion appellation on the market.
