Seven Angels, is a series of seven single malt whiskies to be released from Spirit of Hven. St. Uriel’s is the second whisky in the series. A limited edition, single malt, with a modest touch of smoke.
St Uriel is a careful blend of eight casks, of three different woods. One of which is an ex- cabernet cask. A bespoke selection of 3 different woods are used, with selected levels of toasting for the perfect result. All of the casks are made from oak, air-dried for a minimum of 36 months before a very gentle filtration, the casks were then married together in a tank with a light aeration. St Uriel’s was matured in a climate controlled warehouse from 2012.
On the nose is a north Italian cabernet. With some aeration in, the whisky develops a strong note of malt and toasted oak. Lurking in the background there is a hint of menthol. Chinkapin oak contributes with the typical Hven note of butterscotch and fudge. A nice floral, flower scent with hints of banana and clear nose of vanilla and raisins in towards the end.
Despite its strength, St. Uriel’s is perfectly balanced and surprisingly mellow. A careful filtration has kept the buttery esters, mingled with notes of vanilla and a silky texture. Balanced acidity, with a modest bitterness and highlighted sweetness from the Chinkapin oak.
