The Macallan Harmony Collection 5: Phoenix Honey Orchard Tea is a limited-edition single malt inspired by JING’s rare Phoenix Honey Orchid tea. Matured predominantly in sherry-seasoned American oak casks, with additional maturation in European oak and a subtle inclusion of ex-bourbon casks, this whisky offers a harmonious blend of flavours. On the nose, it presents ripe peach and apricot, floral honey, orange blossom, and gentle oolong aromatics, with hints of toffee and vanilla. The palate reveals honeyed stone fruit with soft spice, sherry-led depth balanced by creamy vanilla from bourbon-influenced casks. See More

Description

The Macallan Distillery in Craigellachie, Speyside, focuses on shaping whisky through cask influence. It uses carefully selected sherry-seasoned oak from Jerez, Spain, alongside American and European oak, to layer flavours of dried fruit, spice, and vanilla. Macallan controls fermentation and distillation to preserve natural malt character, and its water comes from the nearby River Spey. Releases like the Harmony Collection highlight the interaction between spirit and cask, showing the distinct profiles Macallan achieves through cask choice, maturation, and blending.
