I have spent the best part of the last 9 years working (and drinking) in some great bars around London, in Farringdon, Shoreditch, Upper Street and Kensington, and in this time I have developed a keen love of cocktails, and an appreciation of the beauty of the spirits that go into them. In my pursuit to find the greatest way of making classic drinks I have also had the honour of receiving one on one training from Alessandro Palazzi, the manager of Dukes, on how to make the perfect martini and old fashioned. I have a particular affinity with the more classic cocktails, (my favourite being the manhattan), finding that many of these can truly open up the flavours of a great spirit. My spirits of choice are typically gins, bourbons and vodkas, but I have recently taken a shine to Pisco and Akvavit, and look forward to furthering my relationship with them!
I was brought up in the Hospitality trade working for the family business since a young age where I naturally developed a passion for food and drink. With over thirteen years of experience in the on trade managing bars, developing and opening Style Bars, and 5* Boutique Hotel Bars and exploring different techniques of mixing and blending cocktails. Over the past three years I have been a Brand Ambassador for a rum and gin company, and my most recent project a consultancy project, focused on training and professional development. I have a love of brandy - especially armagnac - and gin, but also have extensive knowledge of rum, whisky & whiskey and have a serious thirst for wines from Burgundy and sparkling wines! Although known to drink and try anything once, I also have a strange but interesting food and drink pairing combinations that will always raise an eyebrow, but definitely worth trying.

In these troubled times, I am reminded of something my father once said after a gruelling day climbing in the Cairngorms "Let us eat, drink and be merry, for tomorrow we may be dead." I remember how displeased a look my housemaster proffered after I used it in defence of my poor behaviour one term at school. It is in fact a conflation of two biblical psalms but I digress, what I mean to say is that there is always hope and we must keep in good spirits.We had a very busy festive period here at Wardour Street and as always it all passed by so quickly. We welcomed the additions of some of Santa’s little helpers from all areas Amathus, who provided invaluable assistance, and very tasty biscuits!
Firstly there is hope in the form of some new whiskies. We have a whole range of delights from the Bruichladdich clan; we have their Classic, their Barley, their Black Art and weighing in at 167 ppm their Octomore. We also have the Arran Devil’s Punch Bowl III, though this will surely be gone soon. The Blended Whisky Company has given us hope in the form of their Lost Distilleries Blend Batch 5, again this one is sure to sell out fast but I make no secret about us having it in stock. We also have the Smooth Ambler 7yr, 10yr and Rye in stock and at the moment we have plenty for everyone. These exciting new American products offer great quality and value.
On the 17th of September the tremendous people at Jack Daniels are coming to do a master class for us. This will be an excellent chance to taste the regular Jack range as well as a few special ones, including the Single Barrel and the Sinatra. This event will surely sell out so please book now to avoid disappointment.
We had the glorious 12th and now we’ve had Nick’s glorious 30th. A huge milestone for anyone to reach and I am sure you will all join me in wishing him a belated but very happy birthday. I am led to believe it involved vintage champagne and fish and chips, perhaps even the PC. Indeed, I will also take this opportunity to congratulate him on successfully quitting smoking and to thank him for helping me integrate into the Amathus fold.
Lastly I would like to give a shout out to our Chief who has recently returned from his holidays; hopefully refreshed after some kitesurfing or if not, then surely from the pouring rain on his return. On that note, be merry and when you need some drinks or some drinks council, come see us.

Werner Schweicher Annaberg Riesling Kabinett 2013: A classic Mosel Riesling with a fresh lemony fragrance on the nose and complex minerality and stone fruits on the palate as acidity and sweetness exist in perfect harmony.
Manoir du Carra Brouilly: Perfumed cherry and strawberry nose, classic light body and white pepper spice developing. Very refined and focused flavours on the palate. A truly terrific wine with real terroir.
| Fess Parker Chardonnay: Bright yellow-gold. Ripe citrus fruits and melon on the perfumed nose. Fleshy and smooth in texture but lively as well, offering energetic orange, pear and honeydew flavors accented by hints of ginger and mace. Packs a punch but remains bright and lithe, with no excess fat. Finishes with very good focus and spicy persistence, the melon note repeating.
Dolcetto Alba Produttori di Govone 2013: Bright ruby colour, with subtle spice and dred cherry flavours.
Ochoa Calandas White: A dry and aromatic white wine, in which the best vines of Viura and Chardonnay have been selected from the vineyards in Traibuenas and have waited for the optimum ripeness to be harvested. In this white wine, there is a minor variety, Moscatel (7%), which provides characteristic aromas and floral notes.
Fess Parker Clone 115 Pinot Noir: Amasculine, darker-styled and earthy Pinot, the 2012 Pinot Noir Clone 115 saw 25% whole cluster inclusion during fermentation and was aged in 33% new French oak barrels. It gives up loads of pepper, underbrush and crushed rock to go with darker berry-styled fruit.It should drink nicely for 7-8 years.
|Ventisquero Reserve Viognier: Pure, unoaked aromas of apricot and grapefruit with hints of jasmine and lemon blossom. Full and rounded on the palate with crisp acidity balancing the juicy mango, apricot and kiwi fruit flavours. Good complexity and long tangy finish.
||Woodstock Pilot's View Shiraz: 2010 was a text book vintage for McLaren Vale with the ‘Pilot’s View’ Shiraz showing intense fruit richness, spice and an underlying savoury earthiness, a characteristic typical to McLaren Vale Shiraz. You will see lots of dark berries and plums intermingled with mint, vanilla bean, spice and traces of well integrated oak.
