Eau-de-vie is a clear, colourless fruit brandy that is produced by fermenting and distilling fruit juice or fruit wine. The term eau-de-vie is French for "water of life." Eau-de-vie is typically made from grapes, but can also be made from other fruits, such as plums, cherries, apples, and berries. Eau-de-vie has a high alcohol content, typically between 40% and 45% alcohol by volume (80 to 90 proof). It is typically consumed as an after-dinner digestif. Eau-de-vie is a versatile spirit that can be used in a wide variety of cocktails. It can also be enjoyed on its own, or with a splash of water or club soda.
