YAMAZAKI. WHERE IT ALL BEGAN IN 1923.
Yamazaki Distillery, located on the outskirts of Kyoto, holds a special place in the world of Japanese whisky. Inspired by Scottish traditions, Torii chose a completely different terrain and climate to create a unique kind of whisky. The region surrounding Yamazaki, formerly known as "Minaseno," is blessed with some of Japan's purest waters that originate from the convergence of the Katsura, Uji, and Kizu rivers.
This area is not only renowned for its whisky production but also for its historical significance as the home of Sen no Rikyu, Master of "The Way of Tea." The misty climate and soft water found here provide ideal conditions for cask ageing, which gives Suntory whisky its distinctive flavour through its signature "Suntory Maturation." Yamazaki Distillery stands apart from others worldwide due to its ability to produce a diverse range of whiskies in one location. This accomplishment is a testament to Suntory's commitment to crafting world-class whiskies tailored to satisfy the delicate Japanese palate.
HAKUSHU. WHERE INSPIRATION CONTINUES.
The Hakushu Distillery, established 50 years after Yamazaki, is a testament to Keizo Saji's commitment to innovation. In 1973, he brought his father's vision to life by constructing the second distillery under the Suntory brand.
Unlike the Yamazaki distillery, Hakushu boasts a unique water source and environment that greatly influence its whisky production process. During fermentation, skilled craftsmen employ wooden washbacks exclusively, harnessing the maturation potential by preserving heat in the cool air surrounding the distillery.
A meticulous selection of pot stills and casks is made to harmonize with Hakushu's high elevation and climate conditions. The result is an exceptional assortment of single malt whiskies showcasing diverse characteristics that truly capture the essence of its surroundings.
CHITA. MISTY SHORES AND GENTLE SLOPES
The Chita Peninsula and its surroundings in the Aichi Prefecture of Japan have a rich history of craftsmanship in fermentation and distillation. The House of Suntory Whisky's Chita distillery, located in this area, stands tall amidst rolling hills and a peaceful seaside atmosphere.
Unlike most distilleries that produce only one type of grain whisky, Suntory's Chita distillery specializes in creating three distinct types of grain whisky using corn. These whiskies undergo ageing in Omi and Hakushu, where unique climates and natural conditions contribute to their exceptional flavours. Additionally, the use of American White Oak casks adds to the complexity and depth that meet the high standards set by the House.
